<dc:description xml:lang="eng">Abstract: The aim of this paper is to analyze the influence of income, price and price of substitutes on the consumption of poultry for different socio-economic groups and time series. The analysis of all non-agricultural andagricultural socio-economic households showed a high correlation between income and concumption. Income elasticity is low and for all households equals: Ed = 0,291. Between consumption and income, the price of poultry and the price of pork in Serbia, based on time series, there is a high degree of correlation which equals: R=0,988.With the increase of production, income and the price of pork, the consumption of poultry increase, whereas the increase in the price of poultry triggers the decrease in consumption. Income elasticity from time series Ed=0,706, price elasticity Ec = - 0,268 and transversal elasticity compared to the price of pork Etr = 0,111. The determined functions and coefficients of elasticity can be used in the process of production development.</dc:description>
